Camilla The Cupcake Fairy

Today Cupcake Girls hosted our first story time featuring my little girl's favorite & very appropriate book du jour, Camilla The Cupcake Fairy by Tim Bugbird. While we hoped for fun we truthfully feared chaos, as one should when you marry toddlers & cupcakes! Story time could have been a far better idea in theory than in reality, but we are happy to report that our morning was lovely! 

We will happily make story time a reoccurring event at Cupcake Girls.

We officially opened our doors at 302 E Platte Ave just over 2 weeks ago.  So far so great! If you have yet to come by, please come on in and check out our vintage inspired, shabby chic cupcake boutique. We are often asked the definition of "shabby chic" and our answer up until this point has always been "old meets new," but if you really want to understand the shabby chic concept is all you have to do is walk through our welcoming doors.

Every morning we bake our sexy cakes to perfection! We showcase 4 to 6 of our flavors on a daily basis and the beauty of having our very own kitchen means that we get to create new flavors on the fly. In the 2 weeks that we have been open we have already added "Lulu Lemonade" and "Everything's Coming Up Roses" to our menu. Lulu is a kiddie pink lemonade cupcake favorite and Roses is an exotic honey & rose water cupcake. We have so many ideas for new flavors including some savory options.  Stay tuned cupcake lovers!

Grand Opening!!!

 Opening day is just around the corner and we are busy putting the finishing touches on our brand new Cupcake Girls  downtown location at 302 E Platte Ave.

Over the past several months, we have overseen a total transformation of an overlooked, naturally charming, 1300 square foot, previously vacant building. The moment we stepped though those doors, our vision became apparent and our patience paid off.  Cupcake Girls , without a doubt, have found our new home and with every detail attended to, we are finally on the verge of opening our doors. We are proud and extremely excited to invite you in!

 Please join us on our opening day,  Tuesday July 31st from 10 AM - 4 PM. Our current summer hours will be Tuesday through Friday 10 AM - 4 PM and Saturday from 10 AM - 5 PM (look for fall hours to be extended). 

Every cupcake lover who walks through our doors on opening day will receive a free mini cupcake with their purchase while supplies last. We will also have homemade cookies, scones and brownies, as well as freshly brewed coffee and teas from our local vendors Colorado Coffee Merchants and Two Leaves And A Bud . Cupcake Girls will also be exclusively selling a variety of Coca Cola products.

Our renovation project has been an amazing adventure and we have a wonderful feeling that our adventure is really just beginning. Life is about finding your passion and making your passion work for you. Our passion is to bring people together. Our mission is to bring good food to you so that you can enjoy the company at your table. Every one of our recipes is thoughtfully derived from our past and infused with our present with the goal of creating a new experience. Come and create an experience Cupcake Girls!

News Flash

Cupcake Girls are less then 1 month from opening our shabby chic bakery and luncheonette downtown Colorado Springs. Here is an update on our renovation project and an insight in to how our vision is being perfectly transformed to suit our food entrepreneurial dream.

Our little store has been given a lot of TLC over the past several weeks and all of the "behind the wall" elements to renovating our space are close to completion. That means that 'moving day' is right around the corner and it is time to decorate!!  Even as I blog our interior walls are taking on a thoughtful color combination of antique white, candy apple red and lemon ice. Marshmallow white will appropriately take over the exterior walls once our charming building is given a good power wash.  Once the walls are painted and the floors are laid our chandeliers will be hung. We have been collecting and storing everything from 3 door refrigerators to prep tables to umbrella stands and coat racks to our antique 'super find' point of sale counter top. Our garages and home closets are bursting from the seams with coffee makers and cupcake tiers waiting to be put to use in our brand new kitchen!

Each piece of furniture and decor detail has been hand picked by Cupcake Girls and every decision has been made with the goal of making our store ebb and flow and become everyone's "happy place." We have perfected our cupcakes and we are taking that same level of perfection and transferring it into every nook and cranny of our space from the handcrafted butcher block cupcake window bar to the gold curtains hanging from the artisan windows in our "family nook." We have driven 2 hours for the perfect harvest table and 2 minutes to the nearest junkyard scouring for vintage kitchen doors and window panes to refurbish and use as menu boards. Our store is a perfect combination of old meeting new and it is a puzzle anxious to be put together. 

We have learned so much over the course of this renovation. Every decision made came from an idea that we conceived and then had the vision to execute with great thanks to an amazing team of contractors and workers. Our road has been adventurous, yet some how smooth and definitely not over. Our excitement over-rides any fears and we cannot wait to reveal our vision to you.

Attention Food Entrepreneurs

The Cupcake Girls have been busy and our renovations are moving right along. Our permits have passed and demo continues, the walls are open and all new plumbing and electrical is being installed, flooring has been ordered (mahogany 6" planks) , interior paint  colors (antique white & lemon ice) and exterior paint colors (marshmallow white and candy apple red) have been chosen, kitchen equipment has been purchased and mass inventory is on its way. We are even giving our packaging a slight make-over, each chocolate box will be customized with our fantastic logo! Good-bye labels and hello custom professionals! 

We have also chosen our local vendors. Coca-Cola is on board and we will be offering everything and anything from Vitamin Water to Fuze to Tummy Yummies to Coke from Mexico! We are also very excited to announce that we will be using Colorado Coffee Merchants as our local brewer as well as Two Leaves and a Bud for our local tea company! We are thrilled to be working with such great companies and even greater people!

 As you may already know, Cupcake Girls have been renting commercial kitchen space since the launch of our business in August, 2011. As food entrepreneurs, it has been extremely advantageous for us to rent because it has not only kept our overhead low, but it has allowed us the time to settle into the cupcake business and ultimately grow. Renting has allowed us to take this next step towards opening up our own brick and mortar. 

Well over a year ago when we were searching for kitchen space to rent our options were slim to none, especially space centrally located. Cupcake Girls Bakery and Luncheonette has decided to open its kitchen doors to a select number of budding food entrepreneurs. We want to provide a co-operative style kitchen service to local foodies who need a place to set up shop in efforts to grow their business whether it's soup, granola, candy, preserves or wedding cakes! Our rates are competitive and our hours are flexible. Space is limited since we want to keep the kitchen intimate with an emphasis on ease and fun. A funny thing happened...

The other day in the kitchen, somewhere in between baking, frosting, gossiping and dancing, Cupcake Girls made a very rookie mistake. We call it a case of a missing identity reminiscent of the childhood game of mismatching Mr. & Mrs. Potato Head.  

While boxing up our precious sexy cakes we realized that our count of cupcakes was off by one. Our proud persona shifted slightly to an "oh oh" gasp. We were sure that we had 1 extra ET Phone Home cupcake, but we were quizzically staring at 1 extra Smore's Please

Hmmmmmm.....a cupcake mystery.

We troubleshooted and truth be told, we made a crucial frosting error. Our poor little ET cupcakes were smothered with a gooey marshmallow cream cheese frosting and our poor little Smore's cupcakes were wrongly accessorized in a decadent peanut butter cream cheese frosting. We created a total party of flavors at the cost of our cupcakes identity! 

This was a first for Cupcake Girls, but it was not a first for how we handled a potential cupcake catastrophe. We laughed, shook it off and headed straight back into the kitchen for take two with gratitude in our belief in QC- quality control and perfectionism. We whipped up a another perfect batch of cupcakes correcting our innocent error and learned a lesson rooted from experience; separate chocolate cupcakes! 

The most valuable lesson learned on this day, however, is best quoted by writer and philosopher Elbert Hubbard,  "Do not take life too seriously. You will never get out of it alive."  

We made an error, had a laugh, solved a problem and went about our day. All were happy!

Never Fear Competition

With a hopeful July opening of  Cupcake Girls Bakery and Luncheonette in downtown Colorado Springs it seems like we are continually being asked the same question; "How do you feel about the 'sweet' competition?" 

The best analogy to our competitive philosophy most easily adapts to sport. Imagine if you had 2 miles left in a 13.2 mile run that completed a 70.3 mile triathlon and you found yourself running stride for stride next to your rival. I would almost guarantee that you would run faster being neck in neck with your competitor in pursuit of victory than if you were running solo at the back of the pack. The winner of the race may go to the guy with the better 'kick,' but it may just as likely go to the guy who has that 'killer instinct,' whose fire is fueled by competition.

Competition should be embraced and not feared.

It is easy to forget just how big Colorado Springs is and how unique we all our in our tastes and sought after experiences. Competition is embraced all over this city. Just look downtown, Einstein's Bagels is just a block away from Brugger's Bagels. Pikes Perk Coffee is right across the street from Starbucks. Embracing competition means focusing on your business and what makes you stand out.

We are Cupcake Girls! What sets us apart is the experience that we create with every cupcake and this experience is going to spill over tenfold into our upcoming shabby chic store. Perhaps the best way to describe our unique and mindful approach to baking is by telling you the story behind our newest flavor, Rhu-Bea's Garden. My mom, Beatrice, grew rhubarb in her garden and she made the most fantastic strawberry rhubarb pie imaginable. With fresh rhubarb being in season in the Spring, we honored my mom's recipe and tweaked it with a few secretes of our own to recreate the childhood memory of this earthy, nostalgic sweet. We extracted the natural juices from fresh rhubarb and fresh strawberries to create a mouth watering comfort cupcake. Just the smell of the rhubarb simmering on the stove and the sight of it's reddish/pinkish color brought me back to my mom's kitchen, evoking memories of my dad and my five older sisters all waiting for the pie to come out of the oven on a beautiful spring day. Our cupcakes bring memories back to life and our vintage inspired store will not only restore memories, it will create new memories.

We received a lovely mention in an article written by Teresa Farney,  food editor of The Gazette, entitiled New Shops Should Satisfy City's Sweet Tooth. We are very proud to be acknowledged in the company of such great sweet businesses, which also happen to be our competition. We cannot control what our baking competitors are doing, but we can control what we are doing and we know that what we are doing is very special.  So, we chose to embrace our city's sweet tooth and we hope you will too!

Our  cupcake Tuesday tip for you: Find what you love in life and make your passion work for you. It is the best way to wake up every day and it is the best way to fall asleep at night. 
Cupcake Girls made a very big announcement last week and just in case you missed it, we will open a  Cupcake Girls Bakery and Luncheonette this summer downtown Colorado Springs at 302 E Platte (corner of Platte and Weber). It has been excruciating to keep this news on the down low, but the closing papers have finally been signed and we are ready to get Colorado Springs excited! 

We have hired a fantastic general contractor who will oversee the entire renovation project. Over the next couple of months our previously vacant 1950's property will undergo an entire transformation to bring it into the 21st century. Get excited for a vintage inspired, shabby chic, cafe'esque' home for Cupcake Girls.

We want to share the entire renovation process from beginning to end with you! We will keep you updated with stories, photos and even ask for your opinion from time to time! We have a lot of work to do between now and our Grand Opening, but we want to share the good, the bad, the pretty and the ugly with you!  Life is about the journey, not the destination. Join us on our journey... we have a lot of fun!

If it were not for 2 individuals we would not be able to have the business that Cupcake Girls envisioned long ago. You know the story behind the "girls," but you do not know the story behind the "guys." Our husbands, Andy and Brian, met long before we did. They have been racing triathlon professionally for a decade and over the course of the many months that their "girls" have been dreaming up all things 'cupcake,' they have put their support into our passion in every way imaginable. Andy and Brian are making it possible for us to live our dreams just as they live theirs. Thank you!

Confidence In The Kitchen

It may seem daunting to bake or cook from scratch, but that is part of having fun in the kitchen! Cupcake Girls believe that cooking is a subjective experience that encourages creativity, allowing you to combine flavors to cater to your likes and dislikes. 

Just like every passion or talent, cooking takes practice and confidence. Find your individuality in the kitchen by trusting your taste buds. Start with a recipe that you enjoy and tweak it to make it personal. A simple grilled cheese "sammie" is a perfect example of how to twist a comfort food staple:   

  • Fresh Sourdough bread with smokey Cheddar, tomato and avocado
  • Flat bread with Brie and apples
  • French bread with Mozzarella, tomato, fresh basil and a bit of honey

Personalize your plate by making subtle changes to any recipe to suit your palate. Look for ideas and techniques within a recipe, but establish your own style and before you know it, you won't feel so handcuffed to your recipe book. There are countless ways to revolutionize an old or new recipe to suit your mood; the possibilities are endless. You will reap the benefits of your creativity as your confidence in the kitchen grows.

"No Cupcake Left Behind"

The only thing better than eating a  Cupcake Girls cupcake is receiving a Cupcake Girls cupcake unexpectedly! 

We love seeing the faces of our customers when they take their first peak at our yummy "sexy cakes" and believe it or not, one little cupcake has the remarkable ability to make someone's day.

There are always a few cupcakes needing a home after a morning of baking so us girls came up with the idea of "no cupcake left behind." We box up every remaining cupcake and deliver them to unsuspecting parties. We have been trotting around Colorado Springs with free samples since the day we opened in August, 2011. Our cupcakes make wonderful surprises!

Can You Trust A Skinny Chef?

The answer is.....absolutely! Can you trust a not so skinny chef..... absolutely! A skinny chef does not equate to tasteless food just like a not so skinny chef does not equate to fatty food. No one knows your dietary needs better than yourself.

What ever happened to personal responsibility and accountability? There is a trend gravitating towards a colorful plate and exercise, thank goodness. There should also be a trend towards mindful eating. We should not be told what and what not to eat, however we need to be smart with our food choices just as we need to be smart with our life choices.

The Cupcake Girls are skinny. We have often been met at the door with an equally confused and humorous laugh over the fact that we are skinny cupcake bakers. We do plenty of QC (quality control)! Even better, we can pronounce every ingredient in each and every one of our cupcake flavors. We love food as the shared experience that it should be and we love to move!

Cupcake Girls  often blog about the idea of "creating memories in the kitchen" and "enjoying the company around your table." Create a memory with every food choice whether it is having a cupcake and watching 'Dolphin Tale' with your children on a Saturday night or enjoying "Coffee Talk" with your BFF.

Be responsible.  Be accountable. If you can do this for yourself, then you can do this for others, like your children. Your approach to food should be no different then your approach to life:  Live it. Enjoy it. Eat it. Satisfy your mind. Satisfy your soul. Satisfy your palate. 

The Cupcake Girls definitely have "sexy cakes," but perhaps we should make "skinny cakes" too!!

Oh wait.... our "get your greens" cupcake is loaded with fresh, shredded zucchini which is high in vitamins and minerals; C, B6 and potassium to name a few. We substitute apple sauce for the majority of the oil and we use half the amount of sugar than a typical cupcake recipe. We take a similar approach to our "perfect little pumpkin." Pumpkin is loaded with Vitamin A, protein, fiber and magnesium to name a few. These two cupcakes have been "skinnified" and they are not only delicious, they are popular!

As for the frosting...it is frosting people! Life is about balance. Find your balance.

Storytelling From The Kitchen

 
Spring is in the air and Cupcake Girls launched our newest seasonal flavor, "Baby Cakes;" a luscious lemon & lavender cupcake topped with a refreshing lemon & lavender buttercream, a perfect combination of energizing sweetness.


Each one of Cupcake Girls unique flavors is derived from a thoughtful approach to the five senses in combination with past experiences, present moments and hopeful occurrences.

Lemon & lavender evoke a state of revitalization and the essence is unwinding at the same time. The story behind "Baby Cakes" marries these flavorful ingredients with a shared secret among friends
 
This Cupcake Girl (Lisa) was newly pregnant and sitting side by side the other Cupcake Girl (Andrea), trying to decide what to order at Shugas restaurant in celebration of 'Girls Night Out.' My choice was a lemon & lavender ice tea and when my drink was served, the other Cupcake Girl glanced my way with a sugary smile and whispered behind a very tall menu, "are you pregnant?" The smile was reciprocated and accompanied with a nod. My secret was silently shared with my friend

Even if you have made your recipe a thousand times, learn to trust your palate. Don't be afraid to get creative with flavor by being in the moment of your kitchen. First Gluten Free Bite

 We met with the spunky Kristi Hayes, owner of Tabor Mountain Bakehouse, to taste test her gluten free version of Cupcake Girls ET Phone Home and Berrylicious flavors. They were fantastic!

Cupcake Girls were virgins to gluten free treats until Kristi charmed us with her friendly smile and super yummy goodies. We were pleasantly surprised and impressed with such a flavorful and moist cupcake.

 Kristi's cupcakes are gluten free vegan and diabetic friendly. We have one word to describe Kristi's "sexy cakes"  WOW!!!!

Kristi's star ingredient for ET Phone Home is cashew butter and Berrylicious is tweaked with scrumptious strawberries. Mmmmmm!!!! Both cupcake flavors are exclusive to Cupcake Girls.


Cupcake Girls are over the moon to be able to provide a tasty alternative for those of you with food allergies and food sensitivities without comprimising the integrity and richness of our unique cupcakes.

Cupcake Tip Tuesday

For the majority of cupcake recipes you want to bring your eggs and butter to room temperature before you begin making your yummy, "sexy cakes." We have all heard this before and we are all guilty of bypassing this little bite of knowledge because of time constraints or forgetfulness. However, this baking 101 step is an important one if you are looking to bake the perfectly domed, scrumptious cupcake. There are chemical reactions that occur among ingredients throughout the baking process and you can actually see the eggs and butter blend more smoothly when chilly eggs and frigid butter are brought up to room temperature.
 How can you save time and not forget this piece of the cupcake baking puzzle? 

When it is time to bake, walk into your kitchen and immediately take out your eggs and butter.

Make a killer play list on your IPOD because baking is always more fun when dancing is involved. I recently saw Mat Kearney in concert with my hubby and he was awesome!

French press a lovely cup of coffee, Seattles Best (Number 4) is my preferred coffee of the month and enjoy. If you want, you can even pour in a jigger of Baily's for added baking fun. OR.... fill a glass with lots of ice, drop in a few orange slices & pour yourself a bubbly S.Pellegrino.

Find your recipe, gather your equipment, grab your dry ingredients, prep any produce, preheat your oven and VOILA.....your eggs & butter are room temperature and you are ready to bake!

If  you still forget or your eggs are not quiet ready then place your chilly eggs in a warm bowl of water for a few minutes and call your mom or a friend just because.

We receive many requests for gluten free cupcakes so we recently met with the lovely & gluten free activist, Kristi Hayes at Tabor Mountain Bakehouse.  

We are working together to twist and tweak  Cupcake Girls unique and modern flavors in efforts to cater to our gluten sensitive customers. 

 
There is no need to compromise taste when it comes to accommodating food allergies & Cupcake Girls are determined to add amazing, gluten free cupcake options to our menu. 

We look forward to our first taste next Wednesday, February 22 with Kristi's gluten free version of our Berrylicious and ET Phone Home.

Cupcake Tip Tuesday

If you are baking cupcakes for your sweetie this Valentine's Day, here are a few quick tips from the Cupcake Girls.

Be careful not to fill your cupcake liners too full. Fill the liner only 1/2 to 3/4 full to prevent the cupcake top from separating from the cupcake bottom.

The Colorado altitude is tricky so if the liner is filled too full, your cupcakes may invert. If your cupcakes tend to sink, try using a little less sugar and substitute some of the oil with apple sauce. Lighten up your cupcakes!

Rotate your cupcakes in the oven midway through baking time.

The best way to tell if your cupcakes are ready is the old fashioned way. Grab a toothpick or cake tester, if it comes out clean you are good to go. They should also feel nice and springy on top too!

 For your topping, do not use a store bought jar or can of frosting. Put some love into your baking for your honey! Fake cupcake bakers do exist, do not be one of them! Take the time and be thoughtful about your ingredients.

Now it is time to enjoy! Pour yourself a generous glass of wine or a tall glass of cold milk, sit back with your love and eat your sexy cake whether it is in one big embarrassing bite or several small savory bites.

Cupcakes for Valentine's Day

What do women really want for Valentine's Day? The Cupcake Girls, who are both happily married, think that women really just want a small gesture. A unique little something that says that they are in the thoughts of their significant other and whatever that something is, it would be better if it could be shared. Valentine's Day seems to be the perfect day to let the one you love know how much they are loved with a simply notion of gratitude. Truthfully, a smidgen of the sentiment of Valentine's Day should be distributed every day to the one you love, but the holiday allows you to make up for the days you may have missed throughout the year. The stress over elaborate gifts like diamonds should be abolished because women really just want your time and your thoughts. What better way to show the one you love with an old fashioned bouquet of flowers accompanied by some cupcakes, the new trend of chocolate that can be enjoyed by all.

Over the past few months, we have had the privilege of getting to know Amber Mustain, the lovely owner of Beautiful Expressions,  a remarkable flower & gift boutique. We decided to merge our talents for the romantic holiday. Beautiful Expressions will arrange a gorgeous bouquet of flowers and Cupcake Girls will provide a decadent 6 pack of delicious mini cupcakes for a Valentine's Day special. Our romantic flavors will include our 'Pretty in Pink' a cute pink velvet cupcake topped with a pink cream cheese frosting & chocolate covered pomegranate as well as our 'Serve With Champagne' an indulgent chocolate cupcake baked with a hint of Chambord liquor & infused with fresh raspberry juice topped with a rich chocolate frosting & completed with a fresh raspberry.

Rival competitor, ‘Georgetown Cupcakes’ sells 10,000 cupcakes per day at their DC shop! The entrepreneurial sisters, inspired by their late grandmother, opened their flagship store on Valentine’s Day in 2008. They also have their own reality show on TLC called ‘DC Cupcakes.’
 
The Food Network launched the popular ‘Cupcake Wars’ in June 2010. The competition features the country’s top cupcake bakers in 3 elimination rounds. Not only does the winner gain popularity, but they also receive a grand prize of $10,000!
